• puree the garlic with 100ml oil in a food processor.

• In a saucepan heat the remaining 200ml oil to 160C,
• then add the garlic puree.

This will lower the heat.

1. Fry the garlic at 140C till lightly golden and crispy.

2. While the freekeh is cooking, place a medium pan on a medium heat.
3. Add the butter and cook until it turns nut brown.
4. Add the leek and cook until it wilts, stirring as it cooks.
5. Add the mushrooms and cook, stirring, until they, too, begin to collapse.
6. Add salt to taste.
